Wild Turkey Breast Picatta

  • 1 whole turkey breast
  • 6 tablespoons flour
  • 1 1/2 Teaspoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons canola oil
  • 1 tablespoon lemon juice
  • 1/2 cup white wine
  • 2 Teaspoons capers, drained
  • tablespoon butter



The secret to wild turkey as with any wild game is not to over cook it.  When sauteeing the medallions  us a heavy pan over medium high heat to brown the turkey quickly with out over cooking it.

Slice the breast across the grain into 1″ thick slices, place the slices one at a time inside a zip lock bag and pound to 1/2″ thickness, dust with the flour, paprika, salt & pepper mix.  Make sure your pan is fairly hot to sautee the medallions on each side and set aside on a separate plate.  When the medallions are all cooked make the picatta sauce in the same pan with juices adding the lemon juice, wine, capers and butter.  Move the medallions back into the sauce pan spooning sauce over and reheating slightly before serving.
