Spinach Salad with Warm Bacon-Mushroom Dressing

Ingredients

  • 4 slice bacon, diced
  • 1 pound mushrooms, halved
  • 1 tablespoon olive oil
  • 3/4 cup red onion sliced
  • 1/4 cup apple cider vinegar
  • 3 tablespoons honey
  • 1 tablespoon whole grain Dijon mustard
  • 1/3 cup olive oil

salt and pepper to taste

  • 1/2 pound fresh spinach leaves, washed
  • 1 whole egg, sliced

Notes

Saute bacon till crisp, pour off all but 1 tablespoon of fat. Saute half mushrooms till lightly browned, set aside, repeat with 2nd half. Season with salt and pepper, set aside. Heat 1 T oil, saute onion 2 min, keep slightly crisp. Stir in vinegar, honey and mustard and simmer 2 or 3 min. Remove from heat, whisk in oil, season to taste, toss with spinach, bacon, mushrooms, croutons and egg. Serve immediately.
