Ingredients

  • 1/3 cup Flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne
  • 1 whole rabbit, cut up
  • 3 tablespoons Flour
  • 1 cup canola oil
  • 1 1/2 Cups milk or chicken broth

Notes

Mix 1/3 C flour, salt, pepper and cayenne in a zip lock bag. Add rabbit pieces to coat and brown in a skillet with 1/4" of oil. Reduce heat to low, cover and cook till tender, about 20-25 minutes. Remove cover and cook 5 min more to crisp. Move to a plate with paper towels and keep warm.Discard all but 3 T of the oil. Stir in the flour over medium heat stirring constantly till thick and bubbly. Salt and pepper to taste. Serve gravy with meat.
