Shrimp and Mango Tacos

  • 2 tablespoons canola oil
  • 1 pound Medium shrimp, peeled & deveined
  • 2 clove garlic sliced
  • 2 Teaspoons cumin
  • 2 whole serrano chile, minced
  • 1 large mango, skinned & diced
  • 1/4 cup chopped cilantro
  • 4 tablespoons lime juice
  • 8 8" whole tortillas



Heat a large heavy skillet on medium high with the canola oil, add the shrimp with a bit of salt after about 2 minutes add the cumin cooking one minute more then add the chilies, mango and cilantro stirred in cooking one minute more, remove from heat add the lime juice one T at a time along with seasonings as desired.  Warm the tortillas wrapped in a towel for one minute in the microwave.  Serve and enjoy.
