Sauteed Green Beans With Garlic & Herbs

  • 1 tablespoon unsalted butter softened
  • 3 whole garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon olive oil
  • 1 pound green beans snapped and cut to 2"
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup water
  • 2 Teaspoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley


This recipe is easy, fast and good now how can you beat that! Make it the last thing you cook for the meal and serve immediately.


Combine butter, garlic and thyme in a small bowl and set aside.  Heat oil in a 12″ nonstick skillet over medium heat til just smoking, add beans, 1/4 t salt and 1/8 t pepper stirring occasionally, cook til spotty brown, 4 to 6 minutes.  Add water, cover and cook until beans are bright green and still crisp, about 2 minutes.  Remove cover, let water evaporate, add butter mixture and cook, stirring frequently, until beans are crisp tender lightly browned and beginning to wrinkle.  Transfer to serving bowl, toss with lemon juice and parsley, adjust seasoning and serve immediately.
