Salmon with Sweet Chili Glaze

  • 1/4 cup sweet chili sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh grated ginger
  • 6 6 ounce fillets salmon
  • 2 tablespoons rice wine or sherry
  • 2 tablespoons vegetable oil
  • 3 clove garlic, minced
  • 8 oz.s sugar snap peas
  • 3 Cups pea tendrils or sprouts


I've been doing this dish for a couple years now with great success either in individual serving sizes or whole fillets that are cut and served later.


Line a rimmed baking sheet with foil and coat with nonstick spray.  Whisk chili sauce, 2 T soy and 1 T ginger in small bowl.  Place salmon fillets, skin side down, on prepared sheet, spoon chili sauce over and let stand at room temperature for 30 min.  Preheat broiler and broil salmon without turning until browned in spots and almost opaque in center, 6 to 10 minutes depending on thickness.

Sugar snap peas and tendrils make a colorful and flavorful addition if you care to make them.  Heat vegetable oil in large skillet over medium heat.  Add remaining 1T ginger and minced garlic, stir until aromatic, about 30 seconds.  Add peas, stir until crisp and tender, about 2 or  3 minutes.  Add remaining 1T soy, rice wine and tendrils stiring until just wilted, 1 or 2 minutes, drizzle with sesame oil.

Place a fillet on each plate, spoon the pea mixture over and serve.
