Rib Eye & Stilton Sauce

  • 4 whole boneless rib eye steaks
  • 1 tablespoon olive oil
  • kosher salt to taste
  • fresh ground black pepper
  • Stilton Sauce


Prepare the Stilton Sauce ahead of time and hold at room temp or refrigerate if made a day ahead but allow to come to room temp before serving.


Allow steaks to come to room temp for an hour before cooking, wipe them dry with paper towels and brush lightly on each side with olive oil and season with kosher salt and fresh ground pepper.  Grill or pan fry on high searing each side for 2 minutes and finish over indirect heat or in oven to 120 internal temp for rare.  Remove steaks from heat, tent with foil and allow to rest for 15 minutes before slicing and serving with warm Stilton Sauce, see Marinades and Sauces.
