Red Wine Reduction Sauce

  • 1 cup yellow onions finely chopped
  • 1/2 cup carrot, finely chopped
  • 1 ea leek, white part only, chopped
  • 1 tablespoon grapeseed oil
  • 1 whole Granny Smith apple, chopped
  • 1 bottle port wine
  • 2 bottle Merlot or Cabernet wine


Depending on the wine you use the reduction sauce may turn out a bit on the sour side so you may consider adding sugar to taste.


Place the onion, carrot and leek with the grapeseed oil in a medium sauce pan and saute over high heat for 10 minutes, or until golden brown and caramelized.  Add all the remaining ingredients and simmer over medium heat uncovered, for 1 hour.  Strain through a fine-mesh sieve and return to the saucepan.  Simmer for 30 to 45 minutes, or until reduced to 1 cup.
