Pork Sliders

  • 2 pounds ground pork
  • 2 tablespoons finely chopped onion
  • 3 clove garlic, minced
  • 2 tablespoons chopped chipotles in adobo
  • 1 teaspoon oregano, dried
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 whole avocado, halved
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped chives
  • 1/2 teaspoon kosher salt
  • 16 slice cheese
  • 16 small cans burger buns


These are great, a little different, a little spicy. Try with ground beef or elk in place of Pork, make sliders or big boys.


Fire up the barby and mix the meat, onion, chipotle in adobo, oregano, salt and pepper until well combined.  Form the mixture into 16 small patties on a baking sheet and place in the fridge.  In a medium mixing bowl mash the avocado pulp until smooth and combine with the mayo, lime juice, chives and salt.  Add more salt, pepper or lime juice to the avocado mix to suit your taste.  Grill the patties about 3 minutes per side adding cheese on the first flip if you wish.  Set the patties to the side and toast your buns.  Well maybe not yours but the burger buns.  Assemble the sliders with a tablespoon or so of the avocado  mix and chow down.
