Parmesan Roasted Broccoli

Ingredients

  • 4 pounds broccoli
  • 4 clove garlic clove, sliced
  • olive oil
  • 1 1/2 Teaspoons kosher salt
  • 1/2 teaspoon pepper
  • 2 Teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons pine nuts, toasted
  • 1/3 cup parmesan cheese, grated
  • 2 tablespoons basil, julienned

Directions

Preheat oven to 425.  Cut broccoli florets from stalks leaving about 1″ of stalk on each.  Place the florets in a sheet pan large enough to hold them in a single layer.  Toss the garlic on the broccoli and drizzle with 5 T olive oil.  Sprinkle with salt & pepper and roast 20 to 25 minutes until fork tender and slightly browned.

Remove from oven to bowl and immediately toss with 1 1/2 T olive oil, the lemon zest and juice, pine nuts, Parmesan and basil.  Serve immediately.
