Oyster Stew

  • 1/2 cup butter
  • 1 cup minced celery
  • 3 tablespoons minced shallots
  • 1 quart half and half
  • 24 oz.s fresh shucked oysters
  • 1 pinch cayenne pepper
  • salt and pepper to taste


I've made many oyster stews over the years and thought I had it down pretty well but this is by far the best ever! It is elegant and satisfying, serve it with toasted bread or oyster crackers and maybe a drop of two of hot sauce.


Melt the butter in a large skillet over medium heat and cook the celery and shallots until tender.  While that’s cooking remove the oysters from the jar and remove the foot muscle (the small round hard part) from each one.  Pour half and half into a large pot over medium heat.  Mix in the butter, celery, shallot mixture and stir continuously.  When the mixture is almost boiling pour the oysters and their liquid into the pot.  Season with salt, pepper, cayenne pepper and hot sauce if using.  Cook stirring continuously until the edges of the oysters curl, remove and serve immediately.
