Oven Roasted Lamb & Lemon Garlic Potatoes

Ingredients

  • 2/3 cup fresh lemon juice
  • 1/2 cup + 2 tablespoons olive oil
  • 2 1/2 tablespoons dried oregano, divided
  • 1 tablespoon salt
  • 1 head + 12 cloves, garlic
  • 4 1/2 pounds russet potatoes
  • 2 whole 4 pound bone in legs of lamb

Notes

Whisk lemon juice, 1/2 C oil, half the oregano and salt in large bowl. Break garlic head into cloves and peel and chop all cloves and add to marinade. Add potatoes, sprinkle with pepper, toss and let stand 60 min, stirring often. Drain and reserve marinade. Preheat to 500. Cut 6 slits in each leg and insert whole cloves. Brush legs with olive oil and sprinkle with the remaining oregano, salt and pepper. Arrange in a large rimmed baking sheet with potatoes around. Drizzle the legs with half the reserved marinade and roast 30 min before turning down to 350. Roast to 135 for medium rare, remove and tent. Finish browning potatoes, turning occasionally. Arrange potatoes around legs, deglaze pan juices with wine and pour over potatoes and lamb.
