Ingredients

  • 6 to 12 whole thighs
  • 1/4 cup vegetable oil
  • 2 Cups white onion, diced
  • 2 clove garlic chopped
  • 2 pounds tomatillos quartered
  • 4 tablespoons brown sugar
  • 1 tablespoon chipotle chile in adobo chopped
  • 2 Cups chicken broth
  • 1/2 teaspoon salt & pepper

Notes

This is an easy dish to make for a real Mexican family dinner. Serve over rice.

Directions

Heat oil in a heavy 8 quart pot or deep fry pan, season thighs with salt and pepper brown on both sides and remove to a plate.  Cook the onion till soft, add garlic, cook 30 seconds more, add tomatillos and cook together for 10 minutes, add the brown sugar and chipotle chile with adobo sauce, salt and pepper, stir well and bring to a boil.  Add the chicken parts and broth, reduce to a simmer and cook for 45 minutes to concentrate flavors.  Thicken with corn starch and cold water as and if desired.
