Mexican Baked Fish

  • 1 1/2 pounds salmon or white fish
  • 1 cup salsa, see note
  • 1 cup cheddar cheese, grated
  • 1/2 cup crushed corn chips
  • 1 whole avocado, sliced
  • 1/4 cup sour cream


Quick easy and delicious done with salmon or white fish. I did this with salmon and Herdez brand green salsa, WOW is that good. If I were using a white fish I might go for red salsa.


Oven to 400 degrees.  Lightly grease a 8 X 12 baking dish, season fish with salt and pepper, lay it in the dish, cover with salsa, then cheese, then the corn chips and bake uncovered for 15 minutes or until the fish is done to your taste.  Serve topped with sour cream and avocado.
