Kale Breakfast Salad

Ingredients

  • 1/4 cup orange juice
  • 1 tablespoon maple syrup
  • 2 Teaspoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1 bunch kale, ribs removed and sliced
  • 4 strips bacon, sliced, fried & drained
  • 1 whole granny smith apple cored & sliced
  • 1/4 cup cheddar or parmesan cheese
  • 4 large eggs

Notes

I like to take a full package of bacon, slice at 90 degrees into 1/4" slices and fry the entire package to about 3/4 done, drain off fat and store in jar in fridge for future use such as this recipe. This will be better than you may think so serve with Champagne and oj along with slice of toast or a warm muffin.

Directions

Whisk together the oj, syrup, balsamic and 1/2 t of salt.  Remove ribs from kale stack and slice thinly crosswise and dress with the desired amount of oj mixture.  Add the apple and grated cheese toss and divide kale among 4 plates.  Using a large fry pan over medium heat make 4 rounds of the precooked bacon, crack an egg over each round, add 1/4 cup of water and seal with a lid frying till the eggs are done as desired and the water has totally evaporated.  Place a bacon/egg round over each plate of kale season with salt & pepper and serve.
