  • 1/3 cup Flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 1/2" thicks medallions of tender loin
  • 2 large eggs beaten
  • 1/2 cup unseasoned bread crumbs
  • 3 tablespoons vegetable oil
  • 1/2 cup butter
  • 1/4 cup finely chopped parsley
  • 4 lemon wedges


I'd go straight to a heavy, smokey scotch on this baby! Wild boar makes great bacon and pork sausage. Other than that, cook it on the outhouse door, throw away the meat and eat the door. But if you have to try it, use the tenderloin only.Mix flour, salt and pepper, dredge medallions. Dip in egg and then bread crumbs.Cook steaks in a skillet on medium heat for 3 or 4 minute per side or well done turning once. Set aside on a warm covered platter. Wipe skillet with paper towels, cook butter till slightly browned. Sprinkle parsley over steaks, pour butter over that and serve with lemon wedges.
