Jack Flemmings Wild Game Roll Ups

  • 2 inches wild game loin
  • 4 ounce cream cheese
  • 4 oz.s blue cheese
  • 2 whole graranny smith apples, sliced
  • 16 slice thin bacon
  • 32 toothpicks
  • 1/4 cup honey


Jack made these at elk bow hunting camp this year so I know how good they are! 12 on a scale of 10.


Slice off 16 pieces of wild game loin about 1/8 inch thick and pound each to 1/16 inch thickness, almost see through.  Peel, core and slice the apples.  Lay the meat out flat and place a wedge of apple and a slice of cream cheese at the top of each slice then add a slice of blue cheese such as blue stilton, cambazola, etc.  Roll the slices up, wrap with thin bacon secured at each end with tooth picks, place on a tray and drizzle with honey.  Now bbq the roll ups just long enough to crisp the bacon and serve hot.
