Grilled Wild Boar/Pork Roast

Ingredients

  • 4 pounds picnic, butt or shoulder roast

Juniper-Pepper Rub

  • 2 tablespoons juniper berries, toasted & ground
  • 1 tablespoon course salt
  • 1 teaspoon ground pepper all blended together

Balsamic-Apricot Glaze

  • 1/2 cup apricot jam
  • 2 tablespoons balsamic vinegar
  • 2 clove crushed cloves garlic all blended

Notes

Trim the roast of most fat and silver skin and rub well with the juniper-pepper rub. Slow roast in bbq or oven at 250 to an internal temp of 160 for wild boar or 150 for store bought.During the last 45 min of cooking baste twice with the balsamic-apricot glaze.

Directions

Mix the dry rub ingredients and use 2 tablespoons on this roast.  Mix the glaze ingredients and use 1/2 cup on this roast.
