Grill Roasted Beef Short Ribs

Ingredients

    Rub

    • 2 tablespoons kosher salt
    • 1 tablespoon brown sugar
    • 2 Teaspoons pepper
    • 2 Teaspoons ground cumin
    • 2 Teaspoons garlic powder
    • 1 1/4 Teaspoons paprika
    • 3/4 teaspoon ground fennel
    • 1/8 teaspoon cayenne pepper

    Short Ribs

    • 5 pounds bone in beef short ribs
    • 2 tablespoons red wine vinegar

    Glaze

    • 1/2 cup Dijon mustard
    • 1/2 cup red wine vinegar
    • 1/4 cup brown sugar
    • 1 teaspoon rub spice
    • 1/8 teaspoon cayenne pepper

    Notes

    Choose ribs that are about 6 inches long and have at least 1 inch of meat on top of the bone. This is "English" style meaning that the bone is about 6 inches long with the meat on top. You can also use boneless ribs. During the bbq stage watch that the ribs don't get too charred or dry.

    Directions

    FOR THE SPICE RUB:  Combine all ingredients in a bowl, set aside one teaspoon rub for the glaze.

    FOR THE GLAZE:  Whisk all ingredients in a bowl till well mixed.

    FOR THE SHORT RIBS:  Set oven to 300 with middle rack.  Rub the ribs well with the spice mix, arrange bone side down in a baking dish, sprinkle vinegar evenly over ribs, cover tightly with foil and bake till ribs register 165, about 2 hrs.

    Transfer the ribs to the grill bone side down about 2 inches from the flames and brush with glaze.  Rotate and glaze every 30 minutes till ribs reach 195 then tent loosely with foil until serving.
