Ingredients

  • 3 pounds loin roast
  • 1/2 teaspoon cracked black peppercorns
  • 3 Cups good red wine
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped rosemary
  • 5 garlic, crushed

Notes

Combine half the wine, the rest is for you silly, and all other marinade ingredients. Place roast and marinade in a zip lock bag and marinate over night. Grill the roast to desired doneness basting every ten minutes. Allow to rest 10 minutes, slice and serve.
