Easy Pork Chops

  • 4 whole bone in rib or center cut chops
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon Sugar

salt and pepper


    Make 2 cuts about 2 inches apart on each chop through the fat and just into the meat. Rub both sides with oil and sprinkle with salt and pepper. Sprinkle one side of each chop (not the bone) with the sugar.DO NOT PREHEAT THE SKILLET! Arrange the chops sugared side down with bones toward the center of pan. Place pan on stove and set burner to medium. Press the meat of each chop into the pan. Cook till lightly browned, 5 to 10 minutes depending on stove. Using tongs, flip chops, keeping bones toward center, reduce heat to low and cover pan. Cook only till an instant read thermometer inserted from the edge reads 140. This should only take 3 to 6 minutes. Remove chops to platter, tent and let rest 5 minutes. Set skillet to high, add any platter juices and reduce to 3 tablespoons you may have to add a little chicken stock. Salt and pepper to taste. Off heat, add the chops turning to coat and serve immediately browned side up with any extra juices over.Use "natural" rather than "enhanced" chops if you can get them.
