  • 1 large cooked, cracked crab
  • 1 whole egg, lightly beaten
  • 6 tablespoons fresh bread crumbs
  • 2 tablespoons carrot, finely chopped
  • 2 tablespoons celery, finely chopped
  • 1 tablespoon green onion tops, finely chopped
  • 3/4 teaspoon powdered mustard
  • 2 tablespoons mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon hot pepper sauce
  • 2 tablespoons olive oil

Linda & Steve Molatore are great friends and, they're both great cooks. How much better can that be!!! Now, if Steve could just shoot ducks!

Combine 4 T of the bread crumbs with the picked crab and all other ingredients except the olive oil being careful not to over stir. With wet hands, shape into 4 patties 1/2″ thick. Coat both side of the patties with the remaining bread crumbs and allow to set up in the fridge for one hour.

Heat the oil in a large skillet over medium high and fry the cakes about 3 minutes on each side till cooked and golden. Serve with tartar and lemon wedges.

If you wish to make your own tartar stir together 1/2 C mayo, 1T each of celery leaves and green onions chopped fine. Add 1 T each dill pickle relish and capers.
