Chipotle Chicken Thighs

  • 8 large chicken thighs, deboned
  • smoked paprika
  • Salt and Pepper
  • 2 tablespoons olive oil
  • 1/4 pound chorizo sausage, chopped
  • 1 medium carrot, finely chopped
  • 1 medium onion finely chopped
  • 2 clove garlic chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 ea chipotle in adobo chopped
  • 1 tablespoon adobo sauce
  • 1 15 oz can tomato, crushed
  • 1 cup chicken broth


To do this dish Mexican style add a side dish of guacamole and serve with tortillas in place of bread. Finnish off with tequila shots!


Season thighs with salt, pepper and smoked paprika, brown in skillet with olive oil and remove to plate.  Remove excess fat from the pan, brown the chorizo and remove to plate then add the carrot, onion, garlic, thyme and chipotle stir cover and adjust heat to medium cooking 7-8 minutes stirring occasionally.

Add tomatoes, bring to a bubble, add the chicken and chorizo and simmer 7-8 minutes more.  If making a day ahead refrigerate now.  Next day reheat on medium, add 1 cup chicken stock, cover bring to a bubble then stir and cook uncovered 10 minutes.  If the sauce is too thin thicken it with a mixture of corn starch and cold water, serve with bread to mop the sauce.
