Ingredients

  • 3 pounds pork shoulder, cubed
  • 2 tablespoons dried crushed juniper berries
  • 3 quarts veal stock
  • 1 cup tomato puree
  • 1 quart merlot + for cookie
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1 cup diced celery

Notes

Preheat oven to 375. Season the pork with salt and pepper then brown. Place all ingredients in a casserole dish and cook uncovered for 2 hours. Top with grated asiago or parmesan cheese and serve.Easy dish--works well with wild boar.
