Blue Stilton Pears

  • 2 whole Anju pears
  • 3 ounce blue Stilton cheese
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts chopped and toasted
  • 1/2 cup apple cider
  • 1/3 cup brown sugar
  • 1/4 cup port


This recipe appears under both salads and desserts. If using it in a salad place the baked pear on a plate beside or on top of the greens and pour remaining cider-port juices over as a dressing.


Peel, core, halve, cut a flat spot on the bottom of each half and sprinkle pears with lemon juice to prevent darkening.

Mix the cranberries, walnuts and Stilton or other blue cheese by hand in a bowl.

In a separate bowl mix the cider, brown sugar and port.

Assemble by placing the pear halves in a dish just big enough to hold them, stuff with the cheese mixture, pour the cider mixture over them and bake at 375 for 30 min or until the pears are baked through.

Serve with remaining cider sauce over.
