Black Bean & Sausage Soup

  • 3 Cups black beans rinsed and drained
  • 1 pound Italian sausage
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 whole yellow onions finely chopped
  • 1 medium green bell pepper
  • 1 teaspoon black pepper
  • 1 teaspoon oregano, dried
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Teaspoons Italian herb mix
  • 1 whole bay leaf
  • 6 Cups chicken stock
  • 1 teaspoon kosher salt


The recipe calls for Italian sausage but if you're lucky enough to have some Campcook Venison Sausage that would be better.


Fry sausage and set aside.  Heat olive oil and butter in a stock pot over medium heat and cook the chopped onion and bell  pepper till golden.  Add the rinsed beans, pepper, oregano, onion powder, garlic powder, Italian herb mix and bay leaf.  Add 4 cups of chicken stock reserving the rest to use if needed.  Simmer 30 minutes.  Remove the bay leaf and partially puree the soup with an immersion blender.  Add the bay leaf and the cooked sausage.  Add more chicken stock as desired and simmer another 30 minutes.  Add more seasonings to taste (I add a couple tablespoons of Sriracha Sauce) and serve with a dollop of sour cream.
