Beerbutt Chicken

  • 2 whole chickens
  • 1 tablespoon sweet paprika
  • 2 Teaspoons chili powder
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 1 tablespoon packed brown sugar
  • 2 nice cold beer
  • 1 small white onion, diced
  • 2 garlic, diced


Hmmm, rest of the 6 pack for cookie???Trim birds of excess fat, rinse and pat dry. Combine the next 8 items and rub both inside and outside of birds. Open and drink half of each beer while the barbie gets up to temp. Stuff the onion and garlic into the beer cans and place the chicken down over the cans so it rests on the can and it's legs. Don't knock the can over!! (I did twice, then you have to start over with new cans of beer, darn) Grill til 165 internal temp. Cut and serve.Note: watch out for flare ups from fat. Keep a spray bottle of water handy.


In Rick’s version of this recipe you cut the top off the beer can with a can opener, stuff in some onion chunks and tarragon before sitting the chicken over it. Seems like a good idea.
