Ingredients

  • 1 teaspoon salt
  • 1 15 oz can tomato juice, 11 1/2 oz
  • 3 pounds elk roast or burger
  • 1 large onion, sliced
  • 1/2 teaspoon pepper
  • 1 small onion, minced
  • 1/2 cup water
  • 3 Cups ketchup
  • 2/3 cup packed brown sugar
  • 1/2 cup worcestershire sauce
  • 1/2 cup white vinegar
  • 2 tablespoons lemon juice
  • 2 Teaspoons celery seed
  • 1/2 teaspoon cayenne

Notes

If you're doing this with a roast, place the roast in a large dutch oven with the tomato juice, onion and pepper. Simmer for about 4 hours or until tender. Then let the roast cool before shredding it to make the bbq.If you're using elk burger things go a lot faster. Simply brown the burger, forget about the tomato juice, onion and pepper. Make the sauce by combining the water and onion in a sauce pan and boiling until the water is about gone. Then add all the other sauce ingredients and cook about 15 minutes to blend the flavors. Mix in the burger and serve. Sure hope you have 24 buns baby.
