Balsamic Roasted Brussels Sprouts

  • 1 1/2 pounds Brussels Sprouts
  • 4 oz.s pancetta
  • 1/4 cup olive oil
  • 1 tablespoon syrupy balsamic vinegar
  • salt and pepper to taste

Oven to 400.  Wash, trim and halve the sprouts.  Cut the pancetta into 1/4″ dice.  Combine sprouts and pancetta in a bowl with just enough oil to lightly coat them when tossed.  Place all on a sheet pan and season with kosher salt and fresh ground pepper.  Roast 20 to 30 min until tender and lightly browned tossing once during roasting.  Remove to a bowl, drizzle with the balsamic vinegar, toss and serve immediately.
