Bahama Mallards

Ingredients

  • 4 whole dressed mallards, skin on
  • 1/4 cup lime juice
  • 2 tablespoons orange marmalade
  • 1 tablespoon water
  • 1 teaspoon fresh bread crumbs
  • 1 teaspoon Lowry's Seasoned Salt
  • 1 clove seedless orange peeled and quartered
  • 4 clove garlic, minced
  • 12 whole cracked black peppercorns
  • 1 teaspoon rum

Notes

In a small bowl mix the lime juice, marmalade, minced garlic, water and rum. Place ducks in a zip lock with the mixture, seal and chill for 8 hours.Allow ducks 1 hr to come to room temp, Oven to 300. Drain, reserving juice and place ducks in a 10 X 15 baking dish, sprinkle 1/4 t salt over each duck, place 1 orange quarter, 1 garlic clove and 3 peppercorns in each cavity. Arrange ducks breast side up and bake 1 1/2 to 2 hrs or 165 internal temp, brushing several times with the reserved marinade. Enjoy.
