Asparagus a different way!

  • 3 whole eggs
  • 1 pound asparagus
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons water
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste


This is a new, different, easy, quick and tasty way to do asparagus---give it a try.


Place eggs in a sauce pan, cover with cold water, bring to a boil, cover, remove from heat and let stand 16 minutes before cooling in ice water.  Peel and chop.

Asparagus should be of the thicker type.  Cook it as you like but try this microwave way: Trim off the tough ends, pour 1/4 cup water on a plate, cover with a couple sheets of paper towel to soak up the water, place the asparagus on the towel, sprinkle with salt, roll up the towel and nuke 3 to 5 minutes depending on thickness of asparagus.

Whisk all other ingredients together, arrange asparagus on plate, top with sauce and sprinkle chopped egg over.
