Apple Glazed Mallards

  • 1 whole dressed mallard, skin on
  • 1 large red apple cored and cut into 1" chunks
  • 1 cup boiling water
  • 1 teaspoon chicken bouillon granules


  • 1/2 cup apple jelly
  • 2 tablespoons apple juice or dry white wine


Oven to 375. Stuff duck with apple pieces, tie legs, tuck wings behind back and place on roasting rack in a roasting pan. In a bowl, mix water and bouillon stirring till dissolved. Pour half of the bouillon mixture over the duck and bake 45 min basting often with the remaining half. In a 1 qt sauce pan combine glaze ingredients cooking over medium heat till jelly is melted, brushing over duck often for another 10 to 20 min until you have an internal temp of 165. Serve with apple slices and any remaining glaze.
