Apple-Blueberry Flambe

  • 4 tablespoons butter, cubed
  • 1 whole Apple, peeled, cored and cut into 1/2" chunks
  • 1 cup blueberries
  • 4 tablespoons sugar
  • 1/2 cup brandy
  • 1/4 cup cassis liquer
  • 1/4 cup red wine
  • 6 eas creapes filled with cream cheese


This dish was served to us at Teca Mexican Restaurant in Mexico City and was so good we just had to talk him into sharing. Note: If you don't have time to make the creapes just spoon the flambe over some vanilla icecream. Ummm, ummm, good.


Melt the butter in a pan over medium heat, add the apples and sugar sauteing until the apples are just short of cooked through, about 5 min, then add the blueberries, saute about 5 min more, add the brandy and flame it.  When the flame is out add the Cassis and red wine sauteing until slightly thickened, about 5 more minutes.  Plate the warm crepes, spoon the warm flambe over and serve.
